Nurture cherry salmon along with their way of life

In most cases, salmon and cherry salmon are raised in freshwater for a certain period of time before being shipped out, or are raised only in freshwater until shipping out. On the other hand, "Honzakura-masu" respects the way of life of the cherry salmon, and without damaging its original ecology and habits, freshwater-born fry are raised in seawater for a certain period of time and then raised in freshwater again, just as they are in their natural habitat.
Thoroughbred Genealogy of Generations of Thoroughbreds

The fry are born from parents who are able to grow up in Miyazaki's mild climate, and these fry are then raised in an even warmer climate. We select fish with other characteristics such as fast growth and strong growth to create a family lineage. It takes two years for the parents to produce offspring, and it has taken about 10 years for five generations to produce a total of more than 1,000,000 cherry salmon. We are still conducting steady research to select thoroughbreds more carefully.
Utilize natural colors

Salmon and trout are originally white-fleshed fish, but in the wild they prefer to eat crustaceans such as shrimp and crabs, so both their flesh and their eggs, salmon roe, turn bright red. Normally, in aquaculture, salmon and trout are fed with food containing red pigment in advance so that their flesh turns red. The red pigment is not contained in the bait we feed to the salmon. Therefore, the flesh of cherry salmon is not dyed bright red, but rather the natural cherry color of cherry salmon. Also, since the red pigment does not enter the salmon eggs, the salmon roe can be harvested with its original yolk color, a beautiful golden color.
