Gold is the true color of salmon roe.

The color of salmon roe is red, which comes from the fact that salmon and trout eat shrimp and crabs during their migration through the sea, causing red pigment to accumulate in their bodies. Because we raise salmon trout on feed that does not contain red pigment, their salmon roe is golden in color, which is the natural color of egg yolks.

Beautiful, round, bright, moonlit, and expensive

When the beautiful moon graces the sky of Takachiho's peaks with the first hints of autumn, the salmon roe of Sakura trout comes into season. The golden salmon roe is beautiful to the eye, and we have named this elegant, perfectly-rounded product "Tsukimi Ikura" (salmon roe).
Sakura trout are rarely seen in the wild, but here in this production area, the next generation of fry are raised again from the collected salmon eggs. We hope you will enjoy this rare Tsukimi Ikura.
