

Miyazaki Prefecture's first fruit fish! Hebesuburi
Hebesuburi is a "fruit fish" that is mixed with Hyuga City's specialty "Hebesu (Heibei vinegar)" in its feed and carefully raised in the waters of Kitaura where the Kuroshio Current flows.
Hebesu (Heibei-zu) is a vinegared mandarin orange discovered in Hyuga City about 180 years ago. It is thin-skinned and full of mild juice, and is often used as a condiment for hot pot and somen noodles.
It is extremely rich in vitamin C and contains 37 times as much "natudaidine," which is said to prevent lifestyle-related diseases, as yuzu, as well as "eriocitrin" and "naringin," which have antioxidant effects, and 8 of the 9 essential amino acids.
Hebesu Buri, raised on a diet of hebesu, is characterized by a lighter taste and less odor than regular yellowtail.
Some say that the fish meat does not discolor easily over time and even has a subtle fruity aroma!
Yellowtail cultivated by feeding the fish with a mixture of hebesu more than 30 times before unloading is called "hebesuburi.

It has long been known that fruit polyphenols have the effect of reducing the discoloration of fish, and the addition of hebes to the diet has also reduced the fish farming odor.
Compared to regular yellowtail, the blood is less likely to discolor, and the test results showed that Hebes yellowtail is better in terms of freshness and nutritional condition.

It is a special yellowtail that can be used in both Japanese and Western cuisine, as it does not have the odor of farmed fish when grilled.
