Like Nishi-Amera Salmon, Oku-Hinata Salmon grows in Nishi-Amera Village, a mountain village that stretches to the east of the Kyushu mountain range. It was born as a younger sibling of Nishimaira Salmon in the unexplored region of Miyazaki, where a legend of the fallen Heike warriors still remains, and a magnificent landscape of mountain ridges spreads out. Blessed with abundant nature, the area has many mountain streams, where you can see landlocked salmon and rainbow trout, which only live in clean water.
The red color of salmon is due to astaxanthin, which is a powerful antioxidant. It is also rich in vitamins and is said to be effective in relieving fatigue and toning the stomach.
Its elegant flavor without any hint of fishiness can be enjoyed with any dish, such as sashimi, carpaccio, or lightly roasted sushi.
